Chocolate Pudding
2 cups heavy cream
5 medium-sized bars of chocolate, chopped
2 tablespoons confectioners’ sugar
Box of chocolate wafers
3 bananas, thinly sliced lengthwise
In a small saucepan, warm cream over medium-high. Remove from heat and add chocolate. Let it sit for 5 minutes. Add confectioners’ sugar and whisk. Let it cool. Layer chocolate wafers in a baking dish. Add half of the chocolate mixture, then top with banana slices. Top with more wafers and remaining chocolate mixture. Cover and refrigerate until pudding is set.
Brownie Berry Trifles
2/3 cup whipping cream
1 tablespoon sugar
1/4 teaspoon vanilla extract
8 brownies, crumbled into pieces (about 2 cups)
2 cups fresh strawberries
1 cup chocolate syrup
In a large mixing bowl combine whipping cream, sugar, and vanilla extract. Beat until soft peaks form; and then set aside. Divide half of the crumbled brownies between 4 large water goblets. Divide half of the strawberries, syrup, and whipped cream between the glasses, creating layers. Repeat layers with remaining brownies, raspberries, syrup, and whipped cream. Cover and chill before serving.
Orange Creamsicles
1 cup fresh orange juice
1 cup heavy cream or coconut milk
3 tablespoons honey
¼ teaspoon orange extract
½ teaspoon vanilla extract
In a medium bowl, whisk all the ingredients together. Pour mixture into moulds. Let it set for 30-60 minutes, then add popsicle sticks. Freeze for another 4-6 hours or until frozen. To serve, run some warm water along the mould to loosen the popsicles.
