When the sun is at its scorching best, you feel like taking it easy because doing anything would led to sweating buckets. We also understand that you do not want to spend one second more that you have to in the hot kitchen which is why we bring you quick dip recipes that you can have with garlic bread or roti when you don’t feel like eating a whole meal.
Mint and Yogurt Dip
- Creamy fresh yogurt (not sour) – 1 cup
- Mint and coriander paste – 6 tbsp
- Cucumber (medium grated) – 1
- Mint and coriander (chopped) – ¼ cup
- Sugar – ½ tbsp
- Salt to taste
In a mixing bowl, whisk the yogurt till it is smooth. Add the mint and coriander paste, sugar, salt and blend. Then add the chopped mint and coriander, grated cucumber and mix well. Put it in the fridge and serve chilled.
Onion Dip
- Onions (large chopped/sliced) – 3
- Ginger – 1 piece
- Green chili – 2/3
- Sunflower cooking oil – 2 tbsp
- Cumin seeds – 1 tbsp
- Dry red chili (broken into pieces) – 3
- Salt to taste
Blend the onions, ginger and green chilies in a blender and keep aside. Heat oil in a small pan and add the cumin seeds. Let it fry, next add the red chilies and fry till it turns darker. Add this fried mixture to the onion, ginger and green chili paste with salt and mix well. This is a great sandwich spread.
Tomato Salsa Dip
- Tomatoes (moderately ripe) – 4
- Onion – ½
- Green chili – 2
- Coriander – a few sprigs
- Lemon juice
- Salt and black pepper (for seasoning)
Char the onion on a flame without burning it. Remove and let it cool. Once it is cool, peel and chop the onion. Add tomatoes and coriander and mash it slightly to make a lumpy paste. Add lemon juice, salt and black pepper and let it rest for 10 minutes before eating.
