Shahnaz Akhtar, a lawyer based in Dibrugarh, is very passionate about baking. She has been into sugar crafting for a long time and concentrates on designer cakes, cupcakes and chocolate crafting. Here, she shares some easy-to-make recipes for cute cupcakes fit for a dainty high tea.
Ingredients (Approx. 20 cupcakes)
125 gm butter; 1 cup castor sugar; 3 eggs; 1.5 cup plain flour; 1 tsp vanilla essence; 1 tsp baking powder; 3/4 cup (185 ml) milk
Beat butter for 3 min until soft and pale in colour. Add a little sugar, then the eggs one at a time and the vanilla essence, beating well with each addition, until combined. Sieve flour and baking powder and add half to the butter mixture with half the milk. Keep beating the mixture. Add the remaining flour and milk, and beat well until soft.
Take a muffin tray, line the tray with cupcake paper/liners. Evenly fill each cupcake paper with the batter up to 3/4 full (an ice cream scoop would be perfect for this). Bake the cupcakes for 15-20 minutes in a pre-heated oven at 175 degree C or until a tooth pick inserted into a cupcake comes out clean. Take it out of the tray and let it cool down before applying icing.
1 cup butter/margarine; 1 tsp clear vanilla extract; 4 cups sifted confectioners’ sugar (approximately 500 gms); 2 tbsp milk
(Makes: About 6 cups of icing)
In a large bowl, mix the butter with an electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape the sides and bottom of bowl often. When all the sugar has been mixed in, the icing will look dry. Add milk and beat at medium speed until light and fluffy. Keep bowl covered with a damp cloth until ready to use.
- For best results, keep icing bowl in refrigerator when not in use. Refrigerated in an airtight container, this icing can be stored 2 weeks. Rewhip before using.
- For thin (spreading) consistency icing, add 2 tablespoons light corn syrup, water or milk.
Teddy Bear: Cover the cupcake with butter icing. Make the rug with gum paste cutting designs of your choice. Make the teddy with the modelling paste, keeping in mind the minute details to be incorporated in its design and colour.
