When it hot and humid, it tends to kill your appetite and because of that most of us tend to skip meals when it gets overwhelming. This summer, instead of skipping meals which can be very bad for your immunity, pack a lunch that is light and refreshing. Summer salads are a great option because they are not only light but also very nutritional. Here are a few recipes that you can try –
Watermelon and Cucumber Salad
2 tbsp fresh lime juice; 2 tbsp fresh orange juice, 1 tbsp rice vinegar; 1 tbsp Asian fish sauce; ½ tsp chili garlic sauce ; ½ tsp grated ginger; ½ tsp basil powder; 4 cups watermelon (cut into chunks); 1 cucumber (cut into slices); ½ cup mint leaves, chopped; ¼ cup roasted peanuts, chopped; salt and pepper to taste
In a bowl, mix together lime juice, orange juice, fish sauce, chili sauce and ginger. Add salt and pepper. Next put in the watermelon and cucumber pieces. Then add the mint and basil. Mix together and top with chopped peanuts. Check the seasoning and serve.
Bacon Pea Salad
1 packet bacon, cooked and finely chopped; 2 cups frozen peas, thawed ; ¾ cup coarsely grated cheese; ½ small red onion, chopped; ½ cup of mayonnaise; ½ tsp salt; ½ tsp coarsely ground black pepper; ¼ tsp paprika
In a bowl, put in all the ingredients and toss together. Add the salt and pepper at the last. Once you are happy with the seasoning, you can serve it immediately.
Chicken and Mango Salad
2 tbsp olive oil; 1 lemon, juiced; 1 red chilli, deseeded and chopped; 2 ½ cups roasted chicken (leftover chicken works well too); 2 mangoes, peeled and cut into cubes; 100g mixed salad greens, salt and pepper to taste
In a bowl put in the chicken, mango and salad greens. To make the dressing, mix together oil, lemon juice and chill in a separate bowl and drizzle over the chicken. Add salt and pepper, and toss everything together before serving.
