While there are many food channels and blogs, it is not always easy to find recipes that an amateur cook can attempt, or an experienced cook can make in his/her own kitchen without having to make a grocery run beforehand. Shrimp Fried Rice
This recipe is simple, gets ready in a matter of minutes in one single pan and tastes better than most takeaways. It is the perfect week-night meal where you can use leftover rice.
Ingredients
2 eggs
1 tbsp oil
50g butter
400g shrimps
20g ginger, chopped
20g garlic, chopped
1 onion, chopped
½ carrot, finely chopped
20 g green beans, finely chopped
1 tbsp Schezwan sauce
¼ tsp black pepper powder
100g boiled white rice
1 tbsp oyster sauce
1 tbsp soy sauce
Salt to taste
In a dry bowl, beat the eggs with salt and pepper. Scramble them in a pan with oil. Set it aside. In a separate pan, heat butter. Fry the shrimps for about a minute on one half of the pan. On the other half, fry the ginger, garlic and onions. Next, add the carrots and beans. Make sure to mix everything together. Add the Schezwan sauce and fry for another minute. Season with salt and black pepper powder. Add the rice, followed by the oyster and soy sauce. Add the scrambled eggs on top while plating. Serve hot!
Schezwan Paneer
This recipe is inspired by the wonderful vegetarian Chinese food that you get in India. You can replace the paneer with tofu, if you wish.
Ingredients
125g paneer (cottage cheese), cut into medium rectangles
2 onions, cut into quarters and separate each layer
½ green bell pepper, chopped
¼ cup all purpose flour
¼ cup cornflour
1 cup water
3 tbsp oil
1 tbsp ginger paste (fresh)
1 tbsp garlic paste (fresh)
6 green chillies
Salt to taste
½ tsp black pepper powder
1 tsp Schezwan sauce
1 tsp soy sauce
1 tbsp roasted sesame seeds, for garnish
Batter: In a bowl, add 1/4 cup corn flour and 1/4 cup all purpose flour. Season with some salt and mix well. Add 1 tsp oil and stir again. Pour in some water and mix till lumps disappear. Dip the paneer slices in this mix.
In a wok, heat 2 tbsp of refined oil. Fry the paneer slices dipped in the flour mix till they turn brown and crispy. Set them aside. Heat another wok, and add 1 tbsp refined oil. Add the onions and fry for about a minute. Throw in the garlic and ginger paste and fry for 10 seconds. The next step would be to add the green bell pepper. Make sure you do not overcook these vegetables as they taste better when crunchy. Add five to six whole green chillies, avoid slitting or chopping them if you don’t want it spicy. Season with salt, pepper and Schezwan sauce. Mix well. Add the fried paneer. Stir for 1 minute and add the soy sauce. Fry gently for another minute and then add the remaining cornflour batter. Cook for another minute. Garnish with roasted sesame seeds!
Italian Egg Rolls
This Italian egg rolls recipe is super easy to prepare and is a great breakfast hack. All you need are some fresh Italian basil leaves, garlic and of course – eggs.
Ingredients
3 eggs
1 tbsp butter
1 tsp garlic, finely chopped
1 tbsp capsicum, finely chopped
1 tbsp tomato, finely chopped
1 tbsp onion, finely chopped
1 tbsp Italian basil leaves, finely chopped
½ tsp black pepper powder
Salt to taste
½ tsp oregano
½ tsp chilli flakes
In a bowl, beat three eggs till smooth. Sieve this mix onto another bowl. Now add the garlic, capsicum, tomato, onion, basil and the rest of the spices to this mixture. Mix well. Spread butter evenly on a pan. Spread the egg mix on the pan and cook on medium heat. Once done, fold the omelette gently. Cut the omelette into thin pieces and serve with your favourite ketchup!
